Blackbook base their wine making on the philosophy of ‘tradition with innovation’. They work with the best modern equipment and focus on maintaining a clean and controlled environment to ensure they achieve true character in their wines. They also focus on a minimal intervention approach which involves relying upon natural yeast and low to zero sulphur so the hard work of the growers isn’t lost in the winery.
Blackbook use a mixture of both French oak and stainless steel fermentation vessels. As texture is key, they often mature in barrel and encourage lees contact with batonnage to further increase flavour and intensity in their wines.
