The Winery

Polgoon boast a new and modern winery onsite. Although modest in size, they boast an army of temperature controlled steel tanks and some variable tanks for red wine fermentation. 


All their sparkling wines are disgorged by hand and the lees is agitated to the cap by giro pallets as shown below.

They are very hands on when it comes to most processes, which is made all the more possible when operating in a small and fully equipped winery as they're able to monitor all stages throughout the winemaking process.
