Whilst Gav believes that experimentation is integral to successful winemaking, he admits that he is a very low tech winemaker and generally tries to keep it simple. Good fruit, gentle handling, ambient yeast and older oak describes 80% of his wines now.
A mixture of oak and stainless steel vessels are in use and plans are being put into place to produce a traditional method sparkling. Natural sparkling Pet-Nat’s are a key feature, as is skin contact with the aromatic varieties such as Bacchus and Ortega.
